The fact of the matter is that the swordplay you see in Star Wars is based on two sources: Chinese Gungfu/Wushu and Japanese Kendo. It never looked like European Fencing because IT NEVER HAD ANYTHING TO DO WITH IT!!! Well with one exception: Christopher Lee as Count Dooku. He comes from the British old school of acting, so one of the things he had to learn was to fence. And Alec Guinness came from the same background, so yes, you can see a bit of that in his rather stiff "duel" with Darth Vader in the original Star Wars movie. The Jedi and Sith schools of swordplay are Asian in origin. Totally different way of approaching it.
Which I don't quite understand, to be honest. It seems like, given how deadly the point of a lightsaber is, a fencing technique would be much more effective. If you only need to sneak a point through your opponent's guard once, and if lightsabers are really that light, that Asian style of swordplay strikes me as pointless, if you know what I mean. :D
