I wish more people were paying taxes, by earning enough money to owe them. However first off I would like a lot of the loop holes that allow rich people to avoid paying what they should pay.
As someone who does UK returns for my taxes and often helps my wife do US returns, I would also love for the US to start a tax simplification programme. I do not like seeing my wife reduced to tears by the sheer level of incomprehensibility of the paper work. For my returns I normally spend longer gathering information on what tax I paid on the interest I get from a couple of savings account than I do keying all the information into the HMRC web site.
