Cinco De Mayo
May. 5th, 2006 02:32 amHere's the skinny, and here is the fattening stuff.
What's your favorite Mexican or Tex-Mex food? I adore huevos rancheros, practically live on chips and salsa, and can't imagine life without crunchy tacos (especially with really good beef or shredded turkey, and using Ortega mix, which may not be strictly authentic but has excellent flavor and salt as the third ingredient, unlike pretty much every other taco seasoning mix out there which has salt as the first).

Date: 2006-05-05 08:52 am (UTC)There is a Mexican place half a block from my apartment that has chicken fajitas that I can never get past on the menu. Every time I go there, I swear I'm going to try something different... and almost every time, I end up with their chicken fajitas.
The few times that I don't end up with their chicken fajitas, I end up with their shredded beef fajitas. Seriously, if you love your Mexican food, you gotta go there next time you're in Columbus.
Estrada's. King Avenue. Just killer.

Date: 2006-05-05 01:06 pm (UTC)As for my favorite mexican food, I'm going with the burritos. Boring, yes, but very yummy.
And, in honor of the day, I'm having breakfast Taquitos (ok, really it's because they're in the freezer and a quick and easy breakfast). ;)

Date: 2006-05-05 03:07 pm (UTC)It bemuses me that the ingredients for Mexican food are almost universal in US grocery stores now. We used to have to mail care packages of taco seasoning from Los Angeles to our relatives in Upstate New York, 20 years ago.

And if there's Gringos in the kitchen (unless it's an Americanized chain)-- I'm outathere!

Date: 2006-05-05 04:19 pm (UTC)And beldar, don't be a culinary bigot ;-) The best Mexican (and generally south american) restaurant food I ever had was from a Canadian chef, and the absolute worst was from a place run by a mexican family. I mean it, students would eat there so they could get sick the next day and avoid tests. Really!

Date: 2006-05-05 10:19 pm (UTC)For me I love anything that is authentic Mexican food, especially since my grandma and mother can cook pretty much any food dish that is Mexican (we are from Mexico)! =D I would love to learn how to cook them all but I can make huevos rancheros with some salsa that will make heads spin! Oh, and I love Barbacoa which is shredded beef but made with certain seasonings...I would kill for some of those right now!! Too bad many people don't really know why Cinco de Mayo is actually celebrated...since many believe its Mexico's Independance. =(
it WAS a good tamale!
Date: 2006-05-05 10:28 pm (UTC)Inspired by a cookbook by R. Bayless called "Mexico One Plate at a Time" I plan to have a chicken/onion/green pepper quesidilla for supper.
